It’s summer and I had been craving a good Pina Coloada. I did research to find a good recipe first issue: it was going to be a lot of work second issue: with the grocery stores not fully stocked right now, I worried I would not be able to find everything. I decided to take a trip to our local Bahama Bucks snow cone stand. I ordered a 20oz Pina Colada Bahama Rama Mama, whew that was a mouthful. I’m sure your local snow cone store has something similar. It’s a scoop of vanilla ice cream with ice your choice of flavor and cream.
I took it home and added a shot and a half of Malibu Rum and then a floater of Dark Rum. By this time the snow cone was melted enough that I could mix it up with a spoon. The consistency was like a creamy milkshake. The vanilla ice cream gave it an amazing flavor.
